Chef Eric will oversee all restaurants, banquets and culinary operations at the resort and will manage a staff of more than 150. The son and grandson of Breton fishermen, Chef Eric brings to Cayman his French culinary heritage as well as an intense passion for the sea.Chef Eric comes to The Ritz-Carlton, Grand Cayman from The Beverly Hills Hotel where he was Executive Chef. He also spent two years in the same post at The Inverness Hotel and Golf Club in Denver. Previously he was an architect
of Las Vegas fine dining revolution of the 90s, having served as Executive Chef at Paris, Las Vegas. No stranger to the Caribbean, Chef Eric worked at Coccolaba Plantation Resort on Anguilla. However, he regards Grand Cayman as more beautiful and deserving of both the highest standards of professionalism
and worldwide accolades as a culinary destination.We have a trio that has never been put together before, said Chef Eric.
